
Cajun Chicken Wraps
Ingredients
- 2 tbsp Vegetable Oil
- 2 lb Chicken Thigh sliced into ½ inch cubes
- 6 tbsp Cajun Seasoning
- 3 Red or Orange Bell Peppers sliced into strips
- 2 Red Onion sliced into strips
- 1 tbsp Ginger Garlic Paste
- 4 Tomatoes cubed. Can also use cherry tomatoes cut in half.
- 8 Large Tortillas
- Sliced Provolone Cheese
Steps
- Heat oil in a pan over medium heat. Add the chicken, and sprinkle with 3 tbsp of cajun seasoning. Cook for 5-7 minutes, stirring frequently. Remove the chicken from the pan
- Add bell peppers, onions, and ginger garlic paste to the pan, sprinkling with another 3 tbsp of cajun seasoning. Cook for 5 or so minutes, until slightly softened. Add tomatoes for 1 minute until soft. Add back the chicken and mix together. Remove from heat.
- In tortilla, place cheese and spoon in heated filling on top.
Notes
- This is a great for meal prep. Just set aside the filling into a container and then assemble whenever you need a meal.
- The vegetables will release a lot of water because of seasoning, this may cause a lot sauce which will make the wraps messy. Use a slotted spoon to serve, as it will drain the sauce out.
