Cajun Chicken Wraps

Servings: 8 Wraps

Ingredients
  

  • 2 tbsp Vegetable Oil
  • 2 lb Chicken Thigh sliced into ½ inch cubes
  • 6 tbsp Cajun Seasoning
  • 3 Red or Orange Bell Peppers sliced into strips
  • 2 Red Onion sliced into strips
  • 1 tbsp Ginger Garlic Paste
  • 4 Tomatoes cubed. Can also use cherry tomatoes cut in half.
  • 8 Large Tortillas
  • Sliced Provolone Cheese

Steps
 

  1. Heat oil in a pan over medium heat. Add the chicken, and sprinkle with 3 tbsp of cajun seasoning. Cook for 5-7 minutes, stirring frequently. Remove the chicken from the pan
  2. Add bell peppers, onions, and ginger garlic paste to the pan, sprinkling with another 3 tbsp of cajun seasoning. Cook for 5 or so minutes, until slightly softened. Add tomatoes for 1 minute until soft. Add back the chicken and mix together. Remove from heat.
  3. In tortilla, place cheese and spoon in heated filling on top.

Notes

  • This is a great for meal prep. Just set aside the filling into a container and then assemble whenever you need a meal.
  • The vegetables will release a lot of water because of seasoning, this may cause a lot sauce which will make the wraps messy. Use a slotted spoon to serve, as it will drain the sauce out.
